Seasonality: Autumn (late)
Šafraninis Pepinas – one of the most famous varieties developed by the renowned Russian breeder I. Michurin (created in 1907) by crossing 'Orleans Reinette' with 'Pepin-kitajka'. This variety was long highly popular across Eastern Europe due to its unique flavor and hardiness. While modern varieties now replace it in commercial orchards, enthusiasts of old orchards value it for its distinctive spiced aroma and excellent yield.
Appearance: Fruits are medium or small-sized, round-conical, very regular. The skin is firm, smooth, yellowish-green, but most of the surface is covered with a dark red striped blush. Small light spots are visible on the surface.
Flavor: The flesh is yellowish, dense, juicy, and crisp. The taste is distinctive – dessert-like, sweet with a pleasant tartness, a strong saffron-like (spicy) aroma characteristic of this variety, and a wine-like aftertaste. Flavor intensifies during storage.
Tree characteristics: The variety has very good winter hardiness and recovers quickly after frosts. It has moderate resistance to apple scab. Yields are abundant and regular, but fruits can grow too large, so pruning is necessary. Fruits ripen in late September and, under controlled conditions, can be stored until February or March.
